
Rohu Macher Kalia
Bengali rohu kalia, rich cardamom gravy for Sunday lunch. Tart, fiery, done in minutes — fish waits for no one. Best with hot rice and a side of popped papad.
Ingredients
- Ginger Garlic Paste1 tbsp
- Saltto taste
- Onion2, finely sliced
- Ginger2-inch piece
- Green Chili2, slit
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Potato3 medium, cubed
- Lemon1
- Fish500 g, steaks
- Red Chili Powder1 tsp
- Mustard Oil3 tbsp
- Green Cardamom1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Clean and pat the fish dry; rub with salt, turmeric and lemon and rest 20 minutes.

Fry the fish till the edges crisp and the colour turns pale gold — handle it like it's precious.

In the same oil, fry onions till golden, add ginger garlic paste and the ground spices; cook till the oil separates.

Pour in water or coconut milk, slide the fish back in with the potato, and simmer gently five to seven minutes — no more.

Rest five minutes off the heat — fish firms up and drinks the gravy — then finish with cilantro and lemon.
Chef's tip
Overcooking fish is the only real way to ruin it — stop early.
