Pomfret Kalvan
Maharashtrian pomfret kalvan, coastal thin curry with kokum tang. Fresh fish, hot masala and the confidence to cook it briefly. Serve with steamed rice and lemon wedges.
Ingredients
- Ginger Garlic Paste1 tbsp
- Saltto taste
- Onion2, finely sliced
- Green Chili2, slit
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Curry Leaves2 sprigs
- Lemon1
- Fish500 g, steaks
- Red Chili Powder1 tsp
- Mustard Oil3 tbsp
- Grated Coconut1 cup
- Kokum6-8 pieces
Optional extras
- Fresh Cilantro2 tbsp, chopped

Season the fish with salt and turmeric, and let it sit while the masala builds.

Fry the fish till the edges crisp and the colour turns pale gold — handle it like it's precious.

Soften the onions, add paste and tomato with the spices, and bhunao till thick and red.

Nestle the fish into the simmering gravy with the grated coconut; the residual heat finishes it.

Scatter the kokum and cilantro, squeeze lemon over, and serve straight from the pan.
Chef's tip
A final squeeze of lemon or lime right before serving wakes up every other flavour.
