
Aval Upma Aur Lemon
Poha upma with lemon and peanut, the five-minute breakfast of Tamil flats. The 20-minute breakfast that has fed half a billion mornings. Plate with a wedge of lemon and extra fried curry leaves.
Ingredients
- Saltto taste
- Onion1, finely chopped
- Ginger1 tbsp, minced
- Green Chili2, slit
- Turmeric Powder1/4 tsp
- Vegetable Oil2 tbsp
- Mustard Seeds1 tsp
- Curry Leaves2 sprigs
- Lemon1
- Peanuts1/2 cup, roasted
- Flattened Rice (Poha)2 cups, thick variety
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Toast the flattened rice (poha) in a dry pan until it smells like toast — this is what keeps the final dish fluffy, not gluey.

Pop the mustard seeds in hot oil, add lentils if using, and wait for them to blush gold.

Fry the onions till soft and translucent, add ginger and turmeric; two minutes more.

Stir in the peanuts, then the flattened rice (poha); mix with a light hand so nothing turns to mush.

Steam briefly covered, then cut through the mixture and fluff; squeeze lemon over and shower with cilantro and coconut.
Chef's tip
If the masala sticks, add water a tablespoon at a time rather than drowning the dish.
