
Idli Fry Aur Podi
Leftover idlis pan-crisped in idli-podi oil, the Chennai evening snack. The 20-minute breakfast that has fed half a billion mornings. Serve warm with coconut chutney on the side.
Ingredients
- Saltto taste
- Onion1, finely chopped
- Ginger1 tbsp, minced
- Green Chili2, slit
- Turmeric Powder1/4 tsp
- Vegetable Oil2 tbsp
- Rice3/4 cup
- Mustard Seeds1 tsp
- Curry Leaves1 sprig
- Dried Red Chilies1 tsp
- Lemon1/2
- Sesame Oil1 tsp
- Sesame Seeds1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Toast the rice in a dry pan until it smells like toast — this is what keeps the final dish fluffy, not gluey.

Heat oil and crackle mustard seeds till they pop like popcorn, then add curry leaves — stand back — and the green chilies.

Cook the onions with a pinch of salt till sweet and glassy, then add ginger and the spices.

Stir in the sesame seeds, then the rice; mix with a light hand so nothing turns to mush.

Steam briefly covered, then cut through the mixture and fluff; squeeze lemon over and shower with cilantro and coconut.
Chef's tip
Fresh spices make the dish — if yours smell of nothing, the dish will taste of nothing.
