
Vermicelli Upma Aur Vegetables
Semiya upma with vegetables, the South Indian vermicelli breakfast that never curdles. Breakfast engineering: maximum comfort, minimum fuss. Serve warm with coconut chutney on the side.
Ingredients
- Saltto taste
- Onion1, finely chopped
- Ginger1 tbsp, minced
- Green Chili2, slit
- Turmeric Powder1/4 tsp
- Vegetable Oil2 tbsp
- Mustard Seeds1 tsp
- Curry Leaves2 sprigs
- Green Peas1 cup
- Lemon1/2
- Carrot2, diced
- Vermicelli1 cup
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Dry-roast the vermicelli (if using rava or vermicelli) till nutty and just golden; set aside. Flattened rice needs only a rinse and drain.

Pop the mustard seeds in hot oil, add lentils if using, and wait for them to blush gold.

Fry the onions till soft and translucent, add ginger and turmeric; two minutes more.

Stir in the green peas, then the vermicelli; mix with a light hand so nothing turns to mush.

Rest covered off the heat for five minutes, fluff, and top with the carrot and a hard squeeze of lemon.
Chef's tip
Fresh spices make the dish — if yours smell of nothing, the dish will taste of nothing.
