
Kanda Poha Aur Peanuts
Onion poha with peanuts and lemon, the Maharashtrian breakfast everyone claims their aaji made best. Fluffy, tangy, one pan — done before the coffee brews. Best with a cup of strong filter coffee.
Ingredients
- Saltto taste
- Onion2, finely sliced
- Ginger1 tbsp, minced
- Green Chili2, slit
- Turmeric Powder1/4 tsp
- Vegetable Oil2 tbsp
- Mustard Seeds1 tsp
- Curry Leaves1 sprig
- Lemon1
- Peanuts1/2 cup, roasted
- Flattened Rice (Poha)2 cups, thick variety
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Toast the flattened rice (poha) in a dry pan until it smells like toast — this is what keeps the final dish fluffy, not gluey.

Splutter mustard seeds, tip in the curry leaves and chilies, and let the oil get fragrant.

Cook the onions with a pinch of salt till sweet and glassy, then add ginger and the spices.

Add the onion, saute a minute, then fold in the prepared flattened rice (poha) with salt and a splash of water.

Rest covered off the heat for five minutes, fluff, and top with the peanuts and a hard squeeze of lemon.
Chef's tip
Resting the finished dish for five minutes off the heat lets the spices settle and deepen.
