
Urad Dal Pakora Soft
Soft urad dal pakoras, the Bengali dal bora of winter afternoons. Craggy, crisp and impossible to eat just one of. Best with green chutney and a rain outside.
Ingredients
- Ginger Garlic Paste1 tsp
- Saltto taste
- Ginger2-inch piece
- Green Chili2
- Turmeric Powder1/2 tsp
- Vegetable Oilfor deep frying
- Urad Dal2 cups, chopped
- Asafoetidaa pinch
- Gram Flour1 cup
- Ajwain1/2 tsp
- Peanut Oil1 cup, chopped
- Rice Flour2 tbsp
Instructions

Mix the urad dal into a seasoned batter with the green chili, resting it ten minutes so the flours hydrate.

Get the oil shimmering but not smoking; steady medium-high is the fritter zone.

Drop spoonfuls of the batter into the oil without crowding; they should each have room to swim.

Cook three to four minutes a side until the sizzle quietens, then drain on a wire rack.

Serve hot with chutney and fried green chilies, dusted with chaat masala if you're feeling street.
Chef's tip
If the masala sticks, add water a tablespoon at a time rather than drowning the dish.
