
Makki Di Roti Punjab
Maize-flour roti pressed by hand, the makki di roti that carries winter saag. Flour, water, heat and hands — the oldest bread tradition on earth. Serve with any curry, dal or pickle on the table.
Ingredients
- Salt1 tsp
- Ghee3 tbsp
- Wheat Flour3 cups
- Cornmeal2 cups, chopped
Instructions

Mix the flour(s) with salt, then add water slowly, kneading 8-10 minutes to a soft, springy dough that springs back when poked.

Cover and rest; use this time to make the filling or get the pan hot.

Portion the dough, stuff and pinch the seams closed, then roll with a feather touch so nothing bursts.

Cook the first side dry, the second side with ghee, and finish directly on the flame for the puff.

Brush with butter or ghee, stack in a cloth to keep steam-soft, and serve immediately.
Chef's tip
If the masala sticks, add water a tablespoon at a time rather than drowning the dish.
