
Dahi ki Roti Awadhi
Awadhi dahi roti, the soft yogurt-dough bread from Lucknow's old kitchens. Rolled, rested and flame-kissed — the real thing. Pile in a basket lined with cloth and let everyone grab.
Ingredients
- Yogurt2 cups, whisked
- Saltto taste
- Ghee3 tbsp
- Wheat Flour3 cups
- Green Cardamom1 tsp
Instructions

Bring the dough together with lukewarm water, then knead hard — soft dough makes soft bread, no shortcuts.

Cover and rest; use this time to make the filling or get the pan hot.

Divide into equal balls, then roll — plain, or stuffed and sealed like little parcels before rolling gently.

Slap onto the hot tawa; when dark spots appear, flip and press at the edges with a cloth till it balloons.

Brush with butter or ghee, stack in a cloth to keep steam-soft, and serve immediately.
Chef's tip
Stuffed breads need gentle rolling — burst filling is heartbreak.
