Bengali baked sweet yogurt in clay pots, the mishti doi of College Street. Ghee, sugar, patience — the three ingredients in every Indian celebration. Best after resting an hour; the flavours settle.

Ingredients

  • Yogurt2 cups, whisked
  • Salta pinch
  • Ghee3 tbsp
  • Sugarto taste
  • Jaggery3/4 cup, grated
  • Green Cardamom1 tsp

Instructions

    Measure everything before lighting the flame; there is no pause button mid-cook.

    Start the base: the yogurt and jaggery together in a thick pan, stirring so nothing catches.

    Cook, stirring, until the mixture thickens and leaves the sides of the pan — 15 to 25 minutes of honest work.

    Stir in the green cardamom with the cardamom; the aroma should bloom immediately.

    Spread or shape while warm, garnish with the reserved nuts, cool completely, then cut or serve as it sets.

Chef's tip

Ghee should be fragrant but never browned past golden.
