
Sandesh Nolen Gur
Bengali sandesh kneaded with date-palm jaggery, the winter nolen gur season's prize. Ghee, sugar, patience — the three ingredients in every Indian celebration. Serve at room temperature, cut small — sweetness needs no size.
Ingredients

- Ghee3 tbsp
- Sugarto taste
- Jaggery3/4 cup, grated
- Green Cardamom1 tsp
- Khoa (Mawa)200 g
Instructions

Set out every ingredient measured and ready; Indian sweets move fast once the heat is on.

Combine the khoa (mawa) with the jaggery in a heavy-bottomed pan and begin cooking over medium heat, stirring constantly.

Keep going until the mass pulls away from the pan and glistens; the colour should deepen a shade.

Season the mix with the green cardamom and green cardamom, reserving some nuts for the top.

Spread or shape while warm, garnish with the reserved nuts, cool completely, then cut or serve as it sets.
Chef's tip
A final squeeze of lemon or lime right before serving wakes up every other flavour.
