Aloo Paratha Punjabi Style
Potato-stuffed paratha with white butter, the weekend breakfast that defines North India. Rolled, rested and flame-kissed — the real thing. Best with a rich gravy and sliced raw onions.

Shape each ball, flatten, and either roll plain or enclose a spoonful of filling and roll with the seam down.

Cook the first side dry, the second side with ghee, and finish directly on the flame for the puff.

Slather with ghee, wrap in a clean cloth, and carry to the table warm.
Chef's tip
A final squeeze of lemon or lime right before serving wakes up every other flavour.
