
Burani Raita Garlic
Garlic-pounded burani raita, the Hyderabadi biryani's cooling partner. The soothing counterpart every spicy plate is quietly asking for. Spoon generously; it disappears fastest of anything on the table.
Ingredients
- Yogurt2 cups, whisked
- Salt1 tsp
- Garlic6 cloves
- Roasted Cumin1 tsp
Optional extras
- Green Chili1, finely chopped
- Fresh Cilantro2 tbsp, chopped
Instructions

Smooth the yogurt out; grainy raita is a texture crime.

Prep the yogurt — grate, chop or boil as the dish demands — and let it cool if cooked.

Fold the yogurt into the yogurt with roasted cumin, salt and the green chili.

Let it sit covered; the salt pulls the flavours together.

Serve cold, dusted with the reserved cumin, chili powder and coriander.
