Baingan Aur Yogurt Raita

Smoky fried eggplant folded into yogurt, the Punjabi baingan raita. Cool, spiced and always welcome next to something fiery. Spoon generously; it disappears fastest of anything on the table.

Ingredients
- Yogurt2 cups, whisked
- Saltto taste
- Green Chili2
- Eggplant2 medium (300 g), cubed
- Roasted Cumin1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Whisk the yogurt till smooth and pourable; thick curds want a spoon of milk or water.

Prep the eggplant — grate, chop or boil as the dish demands — and let it cool if cooked.

Mix the eggplant in gently — raita should look marbled, not beaten.

Rest ten minutes in the fridge so the flavours get acquainted.

Serve cold, dusted with the reserved cumin, chili powder and coriander.
Chef's tip
Never add hot ingredients to yogurt — it splits and weeps.
