
Fish Ambot Tik Goa
Goan ambot-tik fish curry — sour tamarind, red chilli, vinegar-bright. Fresh fish, hot masala and the confidence to cook it briefly. Plate with plain rice — the gravy does the talking.
Ingredients
- Ginger Garlic Paste1 tbsp
- Saltto taste
- Onion2, finely sliced
- Green Chili2, slit
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Dried Red Chilies1 tsp
- Lemon1
- Tamarind Paste2 tbsp
- Fish500 g, steaks
- Red Chili Powder1 tsp
- Mustard Oil3 tbsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Clean and pat the fish dry; rub with salt, turmeric and lemon and rest 20 minutes.

Fry the fish till the edges crisp and the colour turns pale gold — handle it like it's precious.

Soften the onions, add paste and tomato with the spices, and bhunao till thick and red.

Nestle the fish into the simmering gravy with the tamarind paste; the residual heat finishes it.

Scatter the dried red chilies and cilantro, squeeze lemon over, and serve straight from the pan.
Chef's tip
Rice flour dusted on the skin keeps it from sticking.
