
Doi Maach Dahi Fish
Bengali doi maach — fish in ginger-yogurt gravy, the gentle Friday curry. Coastal cooking logic: the fish leads, the gravy follows. Serve with steamed rice and lemon wedges.

- Ginger Garlic Paste1 tbsp
- Saltto taste
- Onion2, finely sliced
- Ginger2-inch piece
- Green Chili2, slit
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Lemon1
- Fish500 g, steaks
- Red Chili Powder1 tsp
- Mustard Oil3 tbsp
- Green Cardamom1 tsp

- Fresh Cilantro2 tbsp, chopped

Season the fish with salt and turmeric, and let it sit while the masala builds.

Fry the fish till the edges crisp and the colour turns pale gold — handle it like it's precious.

Build the masala in the fish oil: onions, paste, tomato, spices — fried till it darkens and gleams.

Add the liquid, return the fish with the yogurt, and let it poach gently till just flaking.

Finish with the ginger, fresh coriander and a final drizzle of raw mustard oil if you have it.
