Goan prawn balchao pickle-curry, fiery and vinegary like the coast itself. Minutes from pan to plate, as the sea intended. Plate with lemon wedges and nothing to distract.

Ingredients
- Saltto taste
- Onion1, finely chopped
- Garlic4 cloves
- Ginger2-inch piece
- Green Chili2
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Curry Leaves1 sprig
- Dried Red Chilies1 tsp
- Lemon1
- Vinegar1 cup, chopped
- Prawns300 g, shelled and deveined
- Red Chili Powder1 tsp
Instructions

Clean the prawns carefully — shell, devein or scrub as needed — and pat completely dry.

Warm the oil, add the aromatics, and cook till the kitchen smells ready.

Add the vinegar and spices; toast thirty seconds so they bloom in the oil.

Sear the prawns quickly on strong heat — it should curl and blush, not stew.

Squeeze lemon over, scatter the dried red chilies and cilantro, and get it to the table in ninety seconds.
Chef's tip
Prawns take two minutes a side; anything more is rubber.
