
Rui Macher Kalia
Bengali rui kalia — the celebration fish curry of weddings and anniversaries. Coastal cooking logic: the fish leads, the gravy follows. Plate with plain rice — the gravy does the talking.
Ingredients
- Yogurt2 cups, whisked
- Ginger Garlic Paste1 tbsp
- Saltto taste
- Onion2, finely sliced
- Green Chili2, slit
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Whole Garam Masala Spices1 tsp
- Lemon1
- Fish500 g, steaks
- Red Chili Powder1 tsp
- Mustard Oil3 tbsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Season the fish with salt and turmeric, and let it sit while the masala builds.

Shallow-fry the fish till gold on both sides, just set, and lift out gently; it will finish in the gravy.

Build the masala in the fish oil: onions, paste, tomato, spices — fried till it darkens and gleams.

Add the liquid, return the fish with the onion, and let it poach gently till just flaking.

Scatter the yogurt and cilantro, squeeze lemon over, and serve straight from the pan.
Chef's tip
If the masala sticks, add water a tablespoon at a time rather than drowning the dish.
