Whole pomfret in green-masala crust, the Konkan Sunday fry. Crisp-crusted, soft-flaked — the coastal Indian fry-up standard. Best with a squeeze of lime and cold weather.

Ingredients

  • Ginger Garlic Paste1 tbsp
  • Saltto taste
  • Green Chili2
  • Turmeric Powder1/2 tsp
  • Fresh Cilantro1/2 cup, chopped
  • Lemon1
  • Fish500 g, steaks
  • Red Chili Powder1-2 tsp
  • Mustard Oil4 tbsp, for shallow frying
  • Semolina (Rava)1 cup

Instructions

    Prep the fish: dry, scored and salted; moisture is the enemy of crust.

    Coat with the fresh cilantro and spices and let it sit — 30 minutes minimum.

    Dredge the fish in the coarse coating, pressing hard so it clings to every edge.

    Shallow-fry in hot oil, 4-5 minutes a side, till deep gold and crisp at the edges; drain on a rack.

    Plate with the fresh cilantro remnants fried crisp alongside, lemon and sliced onion.

Chef's tip

A final squeeze of lemon or lime right before serving wakes up every other flavour.
