Ingredients

- Onion1, finely chopped
- Garlic4 cloves
- Ginger1 tbsp, minced
- Green Chili2
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Curry Leaves2 sprigs
- Dried Red Chilies1 tsp
- Lemon1
- Red Chili Powder1 tsp
- Crab2, cleaned and cracked
- Grated Coconut1 cup
Instructions

Clean the crab carefully — shell, devein or scrub as needed — and pat completely dry.

Warm the oil, add the aromatics, and cook till the kitchen smells ready.

Stir in the grated coconut with the ground spices and let them sizzle and darken slightly.

Sear the crab quickly on strong heat — it should curl and blush, not stew.

Squeeze lemon over, scatter the dried red chilies and cilantro, and get it to the table in ninety seconds.
