Kolambi Bhaat Prawn Rice
Maharashtrian kolambi bhaat — prawn rice with coconut, the coastal one-pot. Minutes from pan to plate, as the sea intended. Best eaten immediately, ideally outdoors.
Ingredients
- Saltto taste
- Onion1, finely chopped
- Garlic4 cloves
- Ginger1 tbsp, minced
- Green Chili2
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Rice3/4 cup
- Curry Leaves2 sprigs
- Lemon1
- Prawns300 g, shelled and deveined
- Red Chili Powder1 tsp
- Grated Coconut1 cup
Instructions

Clean the prawns carefully — shell, devein or scrub as needed — and pat completely dry.

Heat oil and fry the aromatics — onion, garlic, green chili — till soft and golden.

Bloom the spices with the rice — half a minute of toasting, no more.

Cook the prawns briefly; the moment it turns opaque, the clock is at zero.

Kill the heat, add the grated coconut and lemon, and serve while it still sizzles.
Chef's tip
Fresh spices make the dish — if yours smell of nothing, the dish will taste of nothing.
