Fiery Tamil kaara kuzhambu — tamarind gravy thick with shallots, eggplant and a roasted spice paste. Rice’s best friend on a rainy day.

Ingredients
- Saltto taste
- Coriander Powder1 tbsp
- Turmeric Powder1/2 tsp
- Fenugreek Seeds1/2 tsp
- Mustard Seeds1 tsp
- Curry Leaves1 sprig
- Asafoetidapinch
- Sesame Oil3 tbsp
- Shallots10, peeled
- Tamarind Paste3 tbsp
- Eggplant200 g, cubed
- Red Chili Powder2 tsp
- Grated Coconut1/4 cup
Optional extras
- Tomato1 optional
- Jaggery1/2 tsp
Instructions

Soak tamarind; extract thick pulp.

Dry-roast coriander, chili, fenugreek and lentils lightly; grind with coconut to a paste.

Temper mustard, fenugreek, curry leaves and shallots in sesame or gingelly-style oil.

Add eggplant (or drumstick/shallots), turmeric and the tamarind; simmer.

Stir in the spice paste; cook until oil floats and the kuzhambu turns glossy.
Chef's tip
A tiny pinch of jaggery rounds the sour heat without making it sweet.
