Beef Tacos
Street-style tacos with smoky seasoned beef piled into warm corn tortillas, brightened with lime, cilantro and raw onion.
Ingredients
- Onion1, diced + 1 raw, finely chopped
- Tomato2, diced
- Fresh Cilantro1/2 cup
- Ground Beef500 g
- Corn Tortillas8 small
- Romaine Lettuce1 cup, shredded
- Cheddar Cheese1 cup, shredded
- Taco Seasoning2 tbsp
- Lime2, cut into wedges
- Salsa1/2 cup
- Sour Cream1/2 cup
- Jalapeño2, sliced
Instructions
- 1
Brown the ground beef in a hot dry skillet, breaking it up. Do not stir too often — let it crust.
- 2
Drain excess fat, add diced onion and cook 3 minutes until soft.
- 3
Sprinkle taco seasoning and 1/3 cup water. Simmer 5 minutes until the sauce clings to the meat.
- 4
Char the tortillas directly over a flame or in a dry pan for 20 seconds per side, then wrap in a towel to steam soft.
- 5
Build: beef first, then cheese (so it melts), then lettuce, tomato, salsa and raw onion.
- 6
Top with cilantro, jalapeño and an aggressive squeeze of lime. Serve two at a time, taco-shop style.
Chef's tip
Warm tortillas are non-negotiable — cold corn tortillas crack and taste of nothing.
