
Chicken Quesadilla
Golden tortilla pockets packed with seasoned chicken and a double-cheese molten core, crisped in butter and cut into wedges.
Ingredients
- Chicken300 g, diced
- Butter2 tbsp
- Onion1, sliced
- Bell Pepper1, sliced
- Mozzarella Cheese1 cup, shredded
- Cheddar Cheese1.5 cups, shredded
- Taco Seasoning1 tbsp
- Salsafor serving
- Sour Creamfor serving
- Flour Tortillas4 large
Instructions

Cook chicken with taco seasoning in a lightly oiled pan until golden and cooked through. Rest, then slice.

Sauté bell pepper and onion in the same pan until slightly charred at the edges.

Mix both cheeses together — cheddar for flavour, mozzarella for the dramatic cheese pull.

Butter a clean pan on medium heat. Lay a tortilla, spread cheese, chicken, vegetables, more cheese, then fold or top with a second tortilla.

Cook 2-3 minutes per side, pressing gently with a spatula, until deep golden and molten inside.

Rest 1 minute (the cheese is lava), cut into wedges and serve with salsa and sour cream.
Chef's tip
Cheese on both the bottom and top of the filling acts as glue — it stops the wedges from falling apart when lifted.
