
Beef Enchiladas
Rolled corn tortillas filled with cumin-spiced beef, drowned in red enchilada sauce and baked under a blanket of melted cheese.
Ingredients

- Garlic2 cloves, minced
- Fresh Cilantrofor garnish

- Ground Beef500 g
- Tomato Paste2 tbsp
- Corn Tortillas10
- Cheddar Cheese2 cups, shredded
- Sour Creamfor serving
- Ground Cumin1 tsp
- Enchilada Sauce2 cups
- Chili Powder1 tbsp

Preheat oven to 190°C (375°F). Brown beef with onion and garlic, then stir in chili powder, cumin and tomato paste. Cook 2 minutes.

Mix 1/2 cup enchilada sauce and 1 cup cheese into the beef. This binds the filling.

Warm the tortillas briefly so they roll without cracking.

Spoon filling down each tortilla, roll tightly and place seam-down in a greased baking dish.

Pour remaining sauce over the rolls so every tortilla is covered, then shower with remaining cheese.

Bake 20-25 minutes until bubbling and golden. Rest 5 minutes, then top with sour cream and cilantro.
Chef's tip
Sauce every corner of the tortillas — any dry patch will turn leathery and hard in the oven.
