
Sev Khamani
Gujarati farsan at its finest — sev khamani walks the line between snack and small meal, sweet-sour, soft-crisp. 45 minutes of mostly hands-off cooking.
Ingredients
- Saltto taste
- Green Chili2
- Mustard Seeds1 tsp
- Curry Leaves1 sprig
- Sugar1 tbsp
- Baking Powder1/2 tsp
- Gram Flour1.5 cups
- Crushed Peanuts1/4 cup

- Fresh Cilantroto finish
Instructions

Whisk the besan with yogurt, a splash of water, turmeric and salt into a smooth, lump-free batter; rest 15 minutes.

Add the baking powder last, stir once, and pour into a greased tray.

Steam 18-20 minutes until a knife comes out clean; cool and cut into squares.

Temper mustard seeds, sesame and curry leaves in hot oil with sugar and a splash of water; pour over the squares.

Finish with coconut and cilantro; serve warm.
Chef's tip
Whisk the batter until you cannot feel a single lump — lumps become dumplings.
