  • Ghee2 tbsp
  • Neutral Oilfor kneading
  • Sorghum (Jowar)2 cups

Instructions

    Knead the flour with water and salt into a medium-soft dough; rest 20 minutes.

    Roll into even rounds, keeping the thickness honest — rustic is the point.

    Cook on a hot tawa, turning once, until brown spots bloom on both sides.

    Brush with ghee and serve hot with whatever the pot is making.
