Slow masala, patient simmer: mangshor jhol is Sunday cooking, whatever day it is. 70 minutes of mostly hands-off cooking.

Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1 tsp
- Saltto taste
- Green Chili3
- Turmeric Powder1/2 tsp
- Potato2, quartered
- Mutton500 g, curry cut
- Mustard Oil2 tbsp
- Nigella Seeds (Kalonji)1/2 tsp
- Panch Phoron1 tsp
Optional extras
- Fresh Cilantroto finish

Marinate the mutton in yogurt, spices and salt for at least 30 minutes — overnight if you plan like a grandmother.

Brown the meat in hot fat so every piece picks up colour before any liquid enters.

Fry the onions deep gold, add the aromatics and ground spices, and bhunao until the oil separates.

Return the meat, add hot water to come halfway, and simmer covered until tender, 35-45 minutes.

Uncover, reduce to the consistency the name promises, and rest before serving.
Chef's tip
The oil on the surface of the masala is your timer; don't rush past it.
