Chicken Sukka
Slow masala, patient simmer: chicken sukka is Sunday cooking, whatever day it is. Gives you a proper meal in 55 minutes.
Ingredients
- Chicken500 g, curry cut
- Ginger Garlic Paste1 tbsp
- Garam Masala1 tsp
- Saltto taste
- Turmeric Powder1/2 tsp
- Curry Leaves2 sprigs
- Coconut Oil2 tbsp
- Grated Coconut1/2 cup
Optional extras
- Fresh Cilantroto finish
Instructions
- 1
Marinate the chicken in yogurt, spices and salt for at least 30 minutes — overnight if you plan like a grandmother.
- 2
Brown the meat in hot fat so every piece picks up colour before any liquid enters.
- 3
Fry the onions deep gold, add the aromatics and ground spices, and bhunao until the oil separates.
- 4
Return the meat, add hot water to come halfway, and simmer covered until tender, 20-30 minutes.
- 5
Uncover, reduce to the consistency the name promises, and rest before serving.
Chef's tip
Hot water, never cold — it keeps the gravy from turning dull.
