The spiral that every Tamil tea stall guards like treasure: shattering crisp, sesame-flecked, impossible to stop at one. Salt, butter and asafoetida do the talking in 40 minutes.

Ingredients
- Butter2 tbsp, softened
- Salt1 tsp
- Cumin Seeds1 tsp
- Urad Dal1/4 cup, roasted and ground
- Asafoetida1/4 tsp
- Peanut Oilfor deep frying
- Rice Flour2 cups
- Sesame Seeds1 tbsp
Instructions

Roast urad dal till golden and fragrant, cool completely, then grind to a fine flour.

Mix rice flour, urad flour, sesame seeds, cumin, asafoetida, salt and butter; rub till crumbly.

Add warm water gradually and knead into a soft, non-sticky dough.

Pipe spirals onto greased sheets with a murukku press.

Fry at 170°C in batches, turning once, till the sizzle fades; drain and cool for the snap.
Chef's tip
If the spirals crack while piping, the dough is dry — knead in a spoon of warm water at a time.
