Mullu means thorn, and the name is honest — this jagged star of rice and gram flour bites back with every crunch. A festival-week staple that stores for a fortnight if you can keep hands off it.

Ingredients
- Butter2 tbsp, melted
- Salt1 tsp
- Urad Dal2 tbsp, roasted and ground
- Asafoetida1/4 tsp
- Gram Flour1/4 cup
- Red Chili Powder1 tsp
- Peanut Oilfor deep frying
- Rice Flour2 cups
- Sesame Seeds1 tbsp
Instructions

Combine rice flour, gram flour, chili powder, sesame, asafoetida and salt in a wide bowl.

Rub in melted butter until the mixture holds when squeezed.

Knead with warm water into a stiff, pliable dough.

Press thorny stars directly over hot oil or onto a ladle.

Fry on medium till deep gold and the oil stops bubbling; cool on a rack.
Chef's tip
Press onto an inverted ladle and slide it into the oil — steadier shapes, fewer broken stars.
