Hand-twisted murukku, the skill-test of Chettinad grandmothers: no press, just palms and patience winding rice dough into tight rosettes. Airy, glassy-crisp and worth every minute.

Ingredients
- Salt1 tsp
- Ghee1 tbsp, melted
- Urad Dal1/4 cup, roasted and ground
- Peanut Oilfor deep frying
- Rice Flour2 cups
- Sesame Seeds2 tsp
Instructions

Knead rice flour, ground roasted urad dal, sesame, ghee and salt with warm water into a soft dough.

Roll portions into thick ropes between your palms.

Wind each rope around two fingers into a spiral rosette, tucking the tail under.

Slide onto a greased spatula and lower into medium-hot oil.

Fry gently till pale gold, then a shade darker for the glass finish.
Chef's tip
Rest the dough 10 minutes covered — it relaxes and stops splitting while you twist.
