Kerala's rose cookies — lacy golden flowers printed by a hot iron mould, eggless and cardamom-scented. Delicate as porcelain, gone in one bite.

Ingredients

  • Salt1/4 tsp
  • Sugar3/4 cup
  • Coconut Milk1.5 cups, thin
  • Coconut Oilfor deep frying
  • Rice Flour2 cups
  • Green Cardamom4, powdered

Optional extras

  • Sesame Seeds1 tbsp

Instructions

    Whisk rice flour, sugar, cardamom and salt into thin coconut milk to a crepe-like batter.

    Rest the batter 15 minutes.

  3. 3

    Heat the achappam mould in oil until a drop of batter sizzles on it.

  4. 4

    Dip the hot mould three-quarters into the batter, then submerge in oil.

  5. 5

    Fry till the cookie loosens and turns gold; shake free and repeat.

Chef's tip

The mould must be hot enough each time — cold iron means the lace won't release.
