Maharashtra's answer to the spiral snack: buttery, ajwain-warm chakli that snaps clean and melts right after. The tea has no chance of getting drunk while a tin of this is open.

Ingredients
- Butter3 tbsp, softened
- Salt1 tsp
- Cumin Seeds1 tsp
- Asafoetida1/4 tsp
- Gram Flour1/2 cup
- Red Chili Powder1 tsp
- Peanut Oilfor deep frying
- Rice Flour2 cups
- Sesame Seeds1 tbsp
Instructions

Mix rice flour, gram flour, sesame, cumin, chili powder, asafoetida and salt.

Rub in softened butter till the mixture is sandy and holds when pinched.

Knead with warm water into a smooth, soft dough.

Press spirals onto greased parchment.

Deep fry at 170°C till the sizzle subsides and the spirals float golden.
Chef's tip
Test the dough by pressing one spiral: if it breaks, add a splash more warm water.
