Ribbon Pakoda

Flat ribbons of gram-and-rice flour that fry faster than any other murukku kin — the first tin emptied at Diwali. Slightly soft-crisp, mildly hot, endlessly snackable.

Ingredients

  • Butter1 tbsp, melted
  • Salt1.25 tsp
  • Turmeric Powder1/4 tsp
  • Asafoetida1/4 tsp
  • Gram Flour1 cup
  • Red Chili Powder1.5 tsp
  • Peanut Oilfor deep frying
  • Rice Flour2 cups

Instructions

    Mix rice flour, gram flour, chili powder, turmeric, asafoetida, salt and butter.

    Add water and knead into a soft dough that presses easily.

    Fit the wide ribbon plate into the press.

  4. 4

    Extrude long ribbons straight into medium-hot oil.

  5. 5

    Fry till the bubbles quiet down; break into pieces once cool.

Chef's tip

Keep the oil on medium — high heat browns the ribbons before they cook through.
