Flat, pebble-cracked discs from Tamil Nadu with peanuts in every bite and curry leaves fried right into them. The crunchy cousin of murukku that packs beautifully for train trips.

Ingredients

  • Salt1.25 tsp
  • Urad Dal2 tbsp, soaked
  • Curry Leaves10, torn
  • Asafoetida1/4 tsp
  • Peanuts1/4 cup, coarsely crushed
  • Red Chili Powder1.5 tsp
  • Coconut Oil2 tbsp + for frying
  • Rice Flour2 cups

Instructions

    Soak urad dal 30 minutes; drain.

    Mix rice flour, dal, peanuts, curry leaves, chili powder, asafoetida and salt.

    Warm the coconut oil and rub it in, then knead with water to a stiff dough.

    Flatten into small discs between palms.

  5. 5

    Fry on medium till crisp and speckled brown; cool completely before storing.

Chef's tip

Pat the discs thin and even — thick centres stay chewy the next day.
