Bengali mixed vegetable medley tempered with panch phoron, made for Durga Pujo bhog. A one-pan weeknight sabzi that asks for little and gives a lot. Serve hot with rotis, dal and a wedge of lemon.

Ingredients

  • Ginger Garlic Paste1 tbsp
  • Garam Masala1/2 tsp
  • Saltto taste
  • Onion1, finely chopped
  • Tomato2, chopped
  • Green Chili1-2, slit
  • Cumin Seeds1 tsp
  • Coriander Powder1 tsp
  • Turmeric Powder1/2 tsp
  • Vegetable Oil2 tbsp
  • Cabbage3 cups, shredded
  • Mixed Vegetables2 cups, chopped
  • Pumpkin300 g, cubed
  • Red Chili Powder1 tsp
  • Panch Phoron1 tsp

Optional extras

  • Fresh Cilantro2 tbsp, chopped

Instructions

    Dice the mixed vegetables uniformly, toss with a pinch of salt and let it sit while the masala comes together.

    Warm the oil, add cumin and a pinch of asafoetida, then the onions — cook till bronzed at the edges.

    Tip in the ginger garlic paste and green chilies, then the spices — fry until the oil separates at the edges.

    Turn the mixed vegetables through the masala with the cabbage, clamp on a lid and let the steam work — check after 10 minutes.

    Uncover, raise the heat for two minutes to dry off any liquid, then shower with cilantro and a squeeze of lemon.

Chef's tip

Resting the finished dish for five minutes off the heat lets the spices settle and deepen.
