
Lehsuni Palak ki Bhaaji
Spinach wilted with fistfuls of fried garlic, ghee-shined and green. The kind of homely bhaji that disappears fastest off the thali. Serve hot with rotis, dal and a wedge of lemon.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Spinach300 g, chopped
- Onion1, finely chopped
- Tomato2, chopped
- Garlic6 cloves
- Green Chili2
- Cumin Seeds1 tsp
- Ghee3 tbsp
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Red Chili Powder1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped

Dice the spinach uniformly, toss with a pinch of salt and let it sit while the masala comes together.

Heat oil in a wide kadhai and crackle cumin seeds; fry the onions till lightly golden.

Add ginger garlic paste, cook out the raw smell, then bloom the turmeric, chili and coriander in the oil.

Fold in the spinach with the garlic, sprinkle in a tablespoon of water, cover and steam until just done.

Kill the heat, stir through the cilantro and the green chili, and rest five minutes before serving.
Chef's tip
If the masala sticks, add water a tablespoon at a time rather than drowning the dish.
