
Bharwa Karela
Bitter gourds stuffed with spiced onion, fried low till deeply savoury. A one-pan weeknight sabzi that asks for little and gives a lot. Serve hot with rotis, dal and a wedge of lemon.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion2, finely sliced
- Tomato2, chopped
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Red Chili Powder1 tsp
- Bitter Gourd3, sliced
- Fennel Seeds1 tsp
- Amchur (Dry Mango Powder)1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Wash and cut the bitter gourd into even, bite-size pieces so everything cooks at the same pace.

Heat oil in a wide kadhai and crackle cumin seeds; fry the onions till lightly golden.

Add ginger garlic paste, cook out the raw smell, then bloom the turmeric, chili and coriander in the oil.

Add the bitter gourd and the onion, toss to coat in the masala, cover and cook on low, stirring twice, until tender.

Finish with garam masala, cilantro and a knob of butter for gloss.
Chef's tip
A pinch of sugar balances tomatoes that lean too sharp.
