Bell peppers stuffed with spiced potato and cashew, roasted till blistered. A one-pan weeknight sabzi that asks for little and gives a lot. Pile beside phulka and a bowl of cooled yogurt.

Ingredients

  • Ginger Garlic Paste1 tbsp
  • Garam Masala1/2 tsp
  • Saltto taste
  • Onion1, finely chopped
  • Tomato2, chopped
  • Green Chili1-2, slit
  • Cumin Seeds1 tsp
  • Coriander Powder1 tsp
  • Turmeric Powder1/2 tsp
  • Vegetable Oil2 tbsp
  • Potato3 medium, cubed
  • Bell Pepper1, sliced
  • Lemon1
  • Cashews1/4 cup
  • Red Chili Powder1 tsp

Optional extras

  • Fresh Cilantro2 tbsp, chopped

Instructions

    Pat the bell pepper dry and chop it into similar-sized chunks — dry surfaces brown better.

    Soften the onions in oil over a medium flame with a little salt until translucent and sweet.

    Add ginger garlic paste, cook out the raw smell, then bloom the turmeric, chili and coriander in the oil.

    Turn the bell pepper through the masala with the potato, clamp on a lid and let the steam work — check after 10 minutes.

    Kill the heat, stir through the cilantro and the cashews, and rest five minutes before serving.

Chef's tip

Cover and cook on low — high heat toughens vegetables before they soften.
