
Bengali Chorchori
Everything-and-the-fridge Bengali chorchori with mustard oil punch. A one-pan weeknight sabzi that asks for little and gives a lot. Pile beside phulka and a bowl of cooled yogurt.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Eggplant2 medium (300 g), cubed
- Mixed Vegetables2 cups, chopped
- Red Chili Powder1 tsp
- Mustard Oil1 tsp
- Panch Phoron1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped

Wash and cut the mixed vegetables into even, bite-size pieces so everything cooks at the same pace.

Warm the oil, add cumin and a pinch of asafoetida, then the onions — cook till bronzed at the edges.

Stir in ginger garlic paste and green chili; after a minute add the ground spices with a splash of water so they don't scorch.

Turn the mixed vegetables through the masala with the eggplant, clamp on a lid and let the steam work — check after 10 minutes.

Kill the heat, stir through the cilantro and the panch phoron, and rest five minutes before serving.
Chef's tip
Fresh spices make the dish — if yours smell of nothing, the dish will taste of nothing.
