
Bharwan Tamatar
Whole tomatoes filled with a pea-potato masala, steamed in their own juice. The kind of homely bhaji that disappears fastest off the thali. Pile beside phulka and a bowl of cooled yogurt.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato3, chopped
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Potato3 medium, cubed
- Green Peas1 cup
- Cashews1/4 cup
- Red Chili Powder1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped

Wash and cut the tomato into even, bite-size pieces so everything cooks at the same pace.

Heat oil in a wide kadhai and crackle cumin seeds; fry the onions till lightly golden.

Tip in the ginger garlic paste and green chilies, then the spices — fry until the oil separates at the edges.

Fold in the tomato with the potato, sprinkle in a tablespoon of water, cover and steam until just done.

Finish with garam masala, cilantro and a knob of butter for gloss.
Chef's tip
Taste as you go — chili heat, salt and sourness should all lift each other, not fight.
