Boiled raw banana cubes tossed in coconut tempering, Kerala sadya style. Simple, spiced straight-talk food — no gravy to hide behind. Pile beside phulka and a bowl of cooled yogurt.

Ingredients

  • Ginger Garlic Paste1 tbsp
  • Garam Masala1/2 tsp
  • Saltto taste
  • Onion1, finely chopped
  • Tomato2, chopped
  • Green Chili1-2, slit
  • Cumin Seeds1 tsp
  • Coriander Powder1 tsp
  • Turmeric Powder1/2 tsp
  • Vegetable Oil2 tbsp
  • Curry Leaves2 sprigs
  • Lemon1
  • Red Chili Powder1 tsp
  • Green Banana2, boiled and peeled
  • Grated Coconut1 cup

Optional extras

  • Fresh Cilantro2 tbsp, chopped

Instructions

    Wash and cut the green banana into even, bite-size pieces so everything cooks at the same pace.

    Heat oil in a wide kadhai and crackle cumin seeds; fry the onions till lightly golden.

  3. 3

    Stir in ginger garlic paste and green chili; after a minute add the ground spices with a splash of water so they don't scorch.

    Add the green banana and the grated coconut, toss to coat in the masala, cover and cook on low, stirring twice, until tender.

    Finish with garam masala, cilantro and a knob of butter for gloss.

Chef's tip

If the sabzi tastes flat, it usually wants salt and lemon, not more chili.
