
Carrot Poriyal
Sweet carrot poriyal with mustard crackle and fresh coconut. A one-pan weeknight sabzi that asks for little and gives a lot. Best mopped up with hot chapatis straight off the flame.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Curry Leaves2 sprigs
- Lemon1
- Carrot2, diced
- Red Chili Powder1 tsp
- Grated Coconut1 cup
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Dice the carrot uniformly, toss with a pinch of salt and let it sit while the masala comes together.

Warm the oil, add cumin and a pinch of asafoetida, then the onions — cook till bronzed at the edges.

Stir in ginger garlic paste and green chili; after a minute add the ground spices with a splash of water so they don't scorch.

Fold in the carrot with the grated coconut, sprinkle in a tablespoon of water, cover and steam until just done.

Kill the heat, stir through the cilantro and the curry leaves, and rest five minutes before serving.
Chef's tip
Cover and cook on low — high heat toughens vegetables before they soften.
