
Paruppu Poriyal
Tamil tempered dal poriyal with coconut, the everyday side that never fails. The kind of homely bhaji that disappears fastest off the thali. Serve hot with rotis, dal and a wedge of lemon.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Curry Leaves2 sprigs
- Yellow Lentils (Toor Dal)1 cup, rinsed
- Lemon1
- Red Chili Powder1 tsp
- Grated Coconut1 cup
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Wash and cut the yellow lentils (toor dal) into even, bite-size pieces so everything cooks at the same pace.

Soften the onions in oil over a medium flame with a little salt until translucent and sweet.

Tip in the ginger garlic paste and green chilies, then the spices — fry until the oil separates at the edges.

Fold in the yellow lentils (toor dal) with the grated coconut, sprinkle in a tablespoon of water, cover and steam until just done.

Uncover, raise the heat for two minutes to dry off any liquid, then shower with cilantro and a squeeze of lemon.
Chef's tip
A pinch of sugar balances tomatoes that lean too sharp.
