Green beans with coconut and curry leaf tempering, light and fresh. Simple, spiced straight-talk food — no gravy to hide behind. Pile beside phulka and a bowl of cooled yogurt.

Ingredients

  • Ginger Garlic Paste1 tbsp
  • Garam Masala1/2 tsp
  • Saltto taste
  • Onion1, finely chopped
  • Tomato2, chopped
  • Green Chili1-2, slit
  • Cumin Seeds1 tsp
  • Coriander Powder1 tsp
  • Turmeric Powder1/2 tsp
  • Vegetable Oil2 tbsp
  • Curry Leaves2 sprigs
  • Lemon1
  • Green Beans2 cups, trimmed
  • Red Chili Powder1 tsp
  • Grated Coconut1 cup

Optional extras

  • Fresh Cilantro2 tbsp, chopped

Instructions

    Wash and cut the green beans into even, bite-size pieces so everything cooks at the same pace.

    Heat oil in a wide kadhai and crackle cumin seeds; fry the onions till lightly golden.

    Tip in the ginger garlic paste and green chilies, then the spices — fry until the oil separates at the edges.

    Add the green beans and the grated coconut, toss to coat in the masala, cover and cook on low, stirring twice, until tender.

    Finish with garam masala, cilantro and a knob of butter for gloss.

Chef's tip

Cover and cook on low — high heat toughens vegetables before they soften.
