
Spring Onion Aur Aloo ki Bhaaji
Spring bulbs and greens tossed with potato, quick northeast-style bhaaji. A one-pan weeknight sabzi that asks for little and gives a lot. Pile beside phulka and a bowl of cooled yogurt.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Ginger2-inch piece
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Potato3 medium, cubed
- Lemon1
- Spring Onions4, sliced
- Red Chili Powder1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Wash and cut the spring onions into even, bite-size pieces so everything cooks at the same pace.

Warm the oil, add cumin and a pinch of asafoetida, then the onions — cook till bronzed at the edges.

Stir in ginger garlic paste and green chili; after a minute add the ground spices with a splash of water so they don't scorch.

Add the spring onions and the potato, toss to coat in the masala, cover and cook on low, stirring twice, until tender.

Finish with garam masala, cilantro and a knob of butter for gloss.
Chef's tip
If the masala sticks, add water a tablespoon at a time rather than drowning the dish.
