
Bengali Luchi
Bengali luchi, snow-white puffed puri for alur dom mornings. Flour, water, heat and hands — the oldest bread tradition on earth. Pile in a basket lined with cloth and let everyone grab.
Ingredients

- Ghee3 tbsp
- Milk1 litre
- All-Purpose Flour2 cups
Instructions

Combine flour, salt and water into a shaggy mass, then knead till smooth and supple; rest covered 20 minutes.

Let it rest in a warm spot; the dough should look smoother and feel like an earlobe when ready.

Shape each ball, flatten, and either roll plain or enclose a spoonful of filling and roll with the seam down.

Cook the first side dry, the second side with ghee, and finish directly on the flame for the puff.

Finish with a slick of butter and eat while the first one is still steaming.
Chef's tip
Stuffed breads need gentle rolling — burst filling is heartbreak.
