
Punjabi Missi Roti
Punjabi missi roti, besan-wheat flatbread with onion, best with white butter. Soft-centred, blistered and buttered; bread as daily ritual. Best with a rich gravy and sliced raw onions.
Ingredients
- Saltto taste
- Onion2, finely sliced
- Ghee2 tbsp
- Gram Flour1 cup
- Ajwain1 tsp
- Wheat Flour3 cups
Instructions

Mix the flour(s) with salt, then add water slowly, kneading 8-10 minutes to a soft, springy dough that springs back when poked.

Let it rest in a warm spot; the dough should look smoother and feel like an earlobe when ready.

Portion the dough, stuff and pinch the seams closed, then roll with a feather touch so nothing bursts.

Slap onto the hot tawa; when dark spots appear, flip and press at the edges with a cloth till it balloons.

Finish with a slick of butter and eat while the first one is still steaming.
Chef's tip
A final squeeze of lemon or lime right before serving wakes up every other flavour.
