
Bajre Ki Roti
Rajasthani bajra roti with ghee and jaggery, desert winter fuel. Flour, water, heat and hands — the oldest bread tradition on earth. Serve with any curry, dal or pickle on the table.
Ingredients
- Saltto taste
- Ghee3 tbsp
- Sesame Seeds1 tsp
- Jaggery3/4 cup, grated
- Pearl Millet (Bajra)1 cup
Instructions

Combine flour, salt and water into a shaggy mass, then knead till smooth and supple; rest covered 20 minutes.

Cover and rest; use this time to make the filling or get the pan hot.

Divide into equal balls, then roll — plain, or stuffed and sealed like little parcels before rolling gently.

Cook on a hot tawa till brown blisters form, flip, then finish over an open flame (or in the pan with ghee) till it puffs.

Slather with ghee, wrap in a clean cloth, and carry to the table warm.
Chef's tip
Rest the dough or it will fight you at the rolling pin.
